Rodriguez, Rizal Preserves a Valued Three-Gen-Old Palabok Recipe

In the Philippines, you’re not a certified party dude if you haven’t tried the “life-elongating” dish yet that frequents Filipino celebrations. That’s right. It’s not as peculiar as balut (fertilized duck egg), but to think that Filipinos can actually eat their way to a longer life, then it’s definitely worth the try!

Actually, this dish–called pansit–attributes the belief that it can extend life to its noodle length. You can see pansit (noodle dish) defining Filipino feasts, especially on birthdays to wish the celebrator a longer life. Well, it’s a superstition.

Quick Trivia

Did you know that the name pansit, also spelled as pancit, is derived from the Hokkien phrase, pian i sit? This means something convenient and easy-to-cook. The history is long but this dish definitely has Chinese origins.

There is quite more about this pansit. As it is well known, Filipinos like to display their creativity in their cuisine. And proof of this is the long list of pansit variations from the different regions in the country. Here’s one of the most popular in the list and a certified hit even outside celebrations.

Palabok, everyone!

What is Palabok?

Palabok is a notorious Filipino cooking of thin rice noodles made peculiar by that bright orange sauce on top. Actually, even with that sauce alone, palabok can be a killer grub already. But to make it extra special, it can be garnished with hard-boiled eggs, crushed chicharon (pork cracklings), tinapa (smoked fish) flakes, shrimps, fried garlic, and scallions. Apart from these, squid, oysters, and mussels are also an option.

It’s surely a feast not just for your tummy but also for your eyes.

The Local Brand

During the pandemic in 2020, Louise’s mother-in-law (Laura) passed down the family recipe of palabok to let her start her small business. Up to date, the recipe never disappoints its customers. Louise has also managed to expand the shop’s menu which now consists of a variety.

It goes without saying that if there’s one dish you shouldn’t miss from Laura’s Palabok… there you go! It would be palabok.

Their specialty assures the customers a rich and finger-looking good recipe even if it’s yet to be tasted. Thanks to Louise who refuses to skimp on ingredients. She makes sure the photos on their social media accounts aren’t there to bait buyers for a product with unexpected qualities. What you see is definitely what you get!

Thinking of trying this dish? The three-generation family recipe of  Laura’s Palabok will surely gratify your taste buds. Mmm…do you see those exquisite toppings?
